Soup can be one of the healthiest and most satisfying meals you’ll ever enjoy, but not all soups are created equal.  Soup that is cream based and heavy on fat and calories is nowhere near as good for you as that made of delicious, fresh, unprocessed ingredients and served in a base of naturally low sodium beef, chicken, or vegetable stock.  I’m not talking about a “cabbage soup diet” here, either.  Soup can be one of the most versatile dishes, but you have to get creative and use all the colors in the vegetable rainbow to get the most health benefit from your soup.
